Crab Cakes

Ingredients

  • 1 pound lump crab meat
  • 1 small green pepper, finely diced
  • ⅓ cup panko bread crumbs
  • ⅓ cup mayo
  • 1 tablespoon brown mustard
  • 1 large egg, beaten
  • ½ tablespoon worcestershire
  • 2 teaspoons lemon juice
  • 1 teaspoon paprika
  • ¼ teaspoon cayenne pepper
  • Salt and pepper, to taste

Directions

  1. Mix together all ingredients, except the crab, until well combined
  2. Fold in the crab meat, careful not to break up the crab too much
  3. Form 6 crab cakes using about ⅓ cup each
  4. Lightly coat each cake with extra panko bread crumbs, if desired, to form a crunchy crust
  5. Pan fry the cakes in 2 batches in butter and oil until golden brown, about 6 minutes each side
