Roasted Garlic Mashed Potatoes

Ingredients

  • 2 heads garlic
  • 4 tablespoons olive oil
  • 5 pounds gold potatoes, peeled and cut into 1 inch cubes
  • 8 ounces sour cream
  • ½ cup butter
  • Salt and pepper, to taste
  • Chives, finely sliced

Directions

  1. Preheat oven to 450° and start bringing a very large pot of water to a boil
  2. Cut the top off of each head of garlic, just exposing the cloves
  3. Place each head of garlic in a large piece of aluminum foil, and drizzle with olive oil
  4. Wrap up each head of garlic so that the head will stand upright and roast in the oven for about 45 minutes, until the garlic is very soft
  5. Meanwhile, boil the potatoes until tender, 10-15 minutes
  6. Strain the potatoes and return them to the hot pot for a another minute to remove excess water
  7. Mash the potatoes to the desired consistency
  8. Once the garlic is done, squeeze out the cloves and mix them, along with the sour cream, into the potatoes
  9. Melt the butter and fold it into the potatoes
  10. Season to taste and top with chives
