Rhubarb Pie

serves 8

Ingredients

  • ½ cup + ⅓ cup flour
  • ½ cup brown sugar
  • 6 tablespoons butter, softened
  • 1⅓ cups sugar
  • 5 cups chopped rhubarb
  • 1 pie crust

Directions

  1. To make the topping, mix together ½ cup flour and the brown sugar
  2. Cut the butter into the dry ingredients and set aside
  3. Preheat the oven to 450°
  4. Lightly grease a 9¼" pie pan
  5. Roll out the pie crust and press it into the pan
  6. Mix the remaining flour and sugar
  7. Sprinkle about ½ cup of the mixture into the pie crust
  8. Add in the rhubarb
  9. Sprinkle the remaining flour & sugar mixture overtop the rhubarb and shake the pie to get the contents to settle
  10. Cover the pie with the topping mixture
  11. Bake for 15 minutes
  12. Reduce the oven temperature to 350° and continue to bake until the rhubarb mixture bubbles, about 35 more minutes
  13. Let cool before cutting and serving
