Ingredients
- ½ cup + ⅓ cup flour
- ½ cup brown sugar
- 6 tablespoons butter, softened
- 1⅓ cups sugar
- 5 cups chopped rhubarb
- 1 pie crust
Directions
- To make the topping, mix together ½ cup flour and the brown sugar
- Cut the butter into the dry ingredients and set aside
- Preheat the oven to 450°
- Lightly grease a 9¼" pie pan
- Roll out the pie crust and press it into the pan
- Mix the remaining flour and sugar
- Sprinkle about ½ cup of the mixture into the pie crust
- Add in the rhubarb
- Sprinkle the remaining flour & sugar mixture overtop the rhubarb and shake the pie to get the contents to settle
- Cover the pie with the topping mixture
- Bake for 15 minutes
- Reduce the oven temperature to 350° and continue to bake until the rhubarb mixture bubbles, about 35 more minutes
- Let cool before cutting and serving
