Sausage Quiche

serves 8

Ingredients

  • 1 pound ground italian sausage
  • 1 large red bell pepper, diced
  • ½ yellow onion, diced
  • 2 cloves garlic, minced
  • 8 ounces fresh spinach, chopped
  • 6 large eggs
  • 1 cup whole milk
  • 6 ounces gouda, cheddar, or another mild cheese, cubed
  • Salt and pepper, to taste (depends on the type of sausage)
  • 1 pre-baked pie crust

Directions

  1. Preheat the oven to 350°
  2. On medium-high heat, brown the sausage and break it up into little clumps
  3. Set aside the sausage in a large bowl and sauté the peppers and onions
  4. Once the peppers and onions are about done, add in the garlic and cook until fragrant
  5. Add the cooked peppers and onions to the bowl with the sausage, the cook then spinach
  6. Once the spinach has fully wilted, press out as much water as possible and add it to the bowl
  7. Beat together the eggs and milk, and add it to the other ingredients
  8. Add in the cheese, salt, and pepper, and mix well
  9. Pour the mixture into the pre-baked pie crust
  10. Cover the edges of the pie crust with foil to prevent burning
  11. Bake until the middle has just set, about 1 hour
