Ingredients
- 1 pound ground italian sausage
- 1 large red bell pepper, diced
- ½ yellow onion, diced
- 2 cloves garlic, minced
- 8 ounces fresh spinach, chopped
- 6 large eggs
- 1 cup whole milk
- 6 ounces gouda, cheddar, or another mild cheese, cubed
- Salt and pepper, to taste (depends on the type of sausage)
- 1 pre-baked pie crust
Directions
- Preheat the oven to 350°
- On medium-high heat, brown the sausage and break it up into little clumps
- Set aside the sausage in a large bowl and sauté the peppers and onions
- Once the peppers and onions are about done, add in the garlic and cook until fragrant
- Add the cooked peppers and onions to the bowl with the sausage, the cook then spinach
- Once the spinach has fully wilted, press out as much water as possible and add it to the bowl
- Beat together the eggs and milk, and add it to the other ingredients
- Add in the cheese, salt, and pepper, and mix well
- Pour the mixture into the pre-baked pie crust
- Cover the edges of the pie crust with foil to prevent burning
- Bake until the middle has just set, about 1 hour
