Spinach & Artichoke Dip

Ingredients
- 4 tablespoons butter
- 1 small onion, diced
- 2 cloves garlic, minced
- 12 ounces fresh spinach, chopped
- 14-ounce cans artichoke hearts, drained and chopped
- 8 ounces cream cheese, softened
- 4 ounces low moisture mozzarella, shredded
- ½ cup grated parmesan
- ¼ cup sour cream, greek yogurt, or mayo
- Salt and pepper, to taste
Directions
- Preheat the oven to 400°
- Sauté the onion and garlic in butter until softened
- Add in the spinach a little at a time and cook until completely wilted and the moisture is evaporated
- Add in the artichokes and continue to cook for a few minutes until tender
- Mix in the cheeses and sour cream until melted
- Season with salt and pepper
- Pour mixture into a an oven safe dish and bake until very hot, about 15 minutes
- Finish under the broiler until the top is golden brown
