Spinach & Artichoke Dip

serves 8

Ingredients

  • 4 tablespoons butter
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 12 ounces fresh spinach, chopped
  • 14-ounce cans artichoke hearts, drained and chopped
  • 8 ounces cream cheese, softened
  • 4 ounces low moisture mozzarella, shredded
  • ½ cup grated parmesan
  • ¼ cup sour cream, greek yogurt, or mayo
  • Salt and pepper, to taste

Directions

  1. Preheat the oven to 400°
  2. Sauté the onion and garlic in butter until softened
  3. Add in the spinach a little at a time and cook until completely wilted and the moisture is evaporated
  4. Add in the artichokes and continue to cook for a few minutes until tender
  5. Mix in the cheeses and sour cream until melted
  6. Season with salt and pepper
  7. Pour mixture into a an oven safe dish and bake until very hot, about 15 minutes
  8. Finish under the broiler until the top is golden brown
