White Chicken Chili

Ingredients

  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons canola oil
  • 2 serrano peppers, diced
  • 4 cups chicken broth
  • 2 4-ounce cans diced green chiles
  • ½ tablespoon cumin
  • ½ teaspoon paprika
  • ½ teaspoon oregano
  • ½ teaspoon coriander
  • ½ teaspoon black pepper
  • 14.5-ounce can navy beans, rinsed
  • 14.5-ounce can cannellini beans, rinsed
  • 14.5-ounce can corn, drained
  • 2 14.5-ounce cans hominy, drained
  • 1 rotisserie chicken, pulled
  • 1 cup cilantro, chopped
  • Juice from 1 lime
  • Mexican cheese
  • Tortilla chips

Directions

  1. In a large pot, sauté the onion and garlic in the canola oil until onions are tender
  2. Add in serrano peppers and cook for a couple minutes
  3. Add in chiles, spices, and broth
  4. Bring to a boil and simmer, covered, for 10 minutes
  5. Mash the navy beans with a little of the liquid until smooth
  6. Add in the mashed beans, whole beans, corn, and hominy, and simmer for another 10 minutes
  7. Stir in the chicken, cilantro, and lime and remove from the heat
  8. Top with cheese and serve with tortilla chips
